Thermo-Kool blast chillers/shock freezers make it easy to ensure food safety while increasing your food's flavor and palatability and reducing profit loss due to food waste.
By reducing temperatures at a much faster rate than conventional refrigeration systems, your food stays out of the "danger zone" temperature for bacteria reproduction. This rapid cooling keeps food fresher longer while locking in flavor and aroma. It also prevents moisture loss which is common with conventional methods.
Our blast chillers reduce the core temperature of cooked foods from 165°F to 37°F within two hours. Shock freezing lowers temperature from 165°F to 0°F within four hours, which is faster than conventional freezers and exceeds HACCP regulations.
Thermo-Kool blast chillers/shock freezers feature a built-in overnight thaw function. The optional thaw cycle alternates fan-driven warm and cold air-between 35°F to 50°F to thaw food overnight.

Increased Shelf Life
After blast chilling, food can be safely preserved at a temperature of 37°F to 39°F for up to five days. With shock freezing, food can be preserved at 0°F for months to safely increase the shelf life of the food.
Blast chilling preserves your food’s flavor and aroma characteristics by preventing loss of aroma and moisture. Compared to conventional freezing, shock freezing produces micro-crystals that do not damage tissue structure. This allows your food to maintain a desirable texture even after thawing.
